Find an exposed run in the basement or crawlspace and scratch it. Galvanised steel is dull grey under the scratch and a magnet sticks to it; copper is obvious by colour and a magnet does not. Threaded joints every few feet also point to steel. Where the pipe has been patched over the decades you will often find both in the same house.

Not always, but it is always more than the plumbing itself. The cost sits in finding the line, opening the floor and putting the floor back. Before agreeing to break concrete, ask whether the run can be abandoned and rerouted overhead instead. On some layouts that is quicker, less destructive and less expensive, and on others it is not — but it should at least be priced.
